This healthy avocado salad happens when you’ve got a lot of produce and good food at home and just can’t decide which way to go when it’s lunch and you’re hungry. There’s corn in there, there’s a little bit of chicken in there, lettuce, avocado, then there’s the Greek/Mediterranean part with olives, basil, cucumbers, tomatoes and feta cheese. I asked this salad “Which ingredients do you want?” and she answered: “Yes.” It’s basically a healthy summer salad with everything. It’s delicious and it makes a lot.
The Ingredients For A Salad With Everything
Avocado. There are 1 1/2 avocados in this. If you’re not allergic to them, you probably love them.
Corn. I didn’t just open a can of corn, rinsed and drain it. No, no. I watched a few videos on Youtube, saw people chopping corn on the cob and decided to try my luck there. I almost chopped my fingers off, cried a few tears, felt like a failure and like I would never make my parents proud. But in the end, I did it. I chopped that corn as if I knew what I was doing. Some of it even made it into the salad.
Chicken. Used like 1/2 cup of leftover grilled chicken in here, was really good. If you don’t like chicken you can just leave it out, add shrimp or add any type of legume you like (chickpeas, lentils, beans…) or anything you like.
Vegetables. Ohhh, summer. So much goodness in here. We’ve got a good amount of tomatoes, lettuce, cucumbers, and basil.
Feta & Olives. Can’t stop eating feta cheese and olives lately, probably not the best choice for me, but I didn’t add any salt, so it turned out great.
Olive oil, garlic, and lemon. No surprise here, since everyone knows the only dressing I can make is olive oil. I did overcomplicate this one by adding a squeeze of lemon and of course that sweet talker garlic.
How To Make An Avocado Salad With Everything
Simple. You just add everything I just mentioned to a large bowl, mix it together and eat. You can share, but if you’re really hungry you might as well just have everything yourself. People don’t like salads anyway, right?
- Boil some water and cook corn
- Chop vegetables & chicken
- Add it all to a salad bowl
- Make a dressing with olive oil, garlic & lemon juice
- Pour it over the rest of the ingredients
- Mix it all together
- Eat right then and there.
If you’re wanting to make this ahead, you probably can. The only thing stopping you from making this life-changing experience is the tomatoes. Those seductive curvy ladies in red will make your salad soggy if you don’t eat the whole thing right away. Solution? Add the tomatoes later. You can do the same for the avocado and the dressing. Everything else will be fine in the fridge for a while.
- 1 1/2 large avocados
- 1 corn, boiled
- 2 medium-sized tomatoes
- 2 small cucumbers
- 1 1/2 cups lettuce
- 1/4 cup feta cheese, crumbled
- 1/3 cup olives
- 1/2 cup chicken, cooked, chopped
- handful basil
- 1 garlic clove, minced
- 1 Tbsp olive oil
- 1/2 lemon, juice of
- Chop avocado, cucumber, tomatoes, lettuce.
- Let corn cool off and cut it off the cob
- Add to a salad bowl: lettuce, tomatoes, cucumbers, chicken, corn, feta cheese, avocado, olives, basil.
- Add olive oil, garlic and lemon juice, then mix everything well together. If you do have to, add salt and pepper to taste.
- Serve immediately or make ahead following the instructions above.
