I have to confess something. I don’t have a recipe of a salad here. And as embarrassing as this might be for some people, it’s not the thing I want to confess. Can’t believe you fell for that.
I ate a piece of Salami Pizza Hut Saturday last week. Now that’s a confession worth confessing. And the other thing I have to confess: Yuck! That pizza was simply disgusting.
I mean the salami was stinking its way to the top like the sky is the limit.
I can’t believe I actually loved this pizza.
And by love I mean LOOOOOOOOOOOOOOOOVVVEEEEEEEEE from the bottom of my heart and stomach!!!!!
The kind of love that makes you act really stupid. The kind of love that makes you want more.
The kind of love that makes you check your messages every 5 seconds to see if the delivery guy is going to bring your sweetheart soon.
The kind of love that makes you think of your darling all the time. The kind of love that makes you go to the other end of the city to order a box of your love with a cheese crust and sliced into 4-8 pieces. Yes. It was that kind of love.
But I broke it off 2 months ago to eat more plants and vegetables. I don’t know, they’re just fresher, juicier and make me feel younger. And now me and pizza live by the rule – look but don’t touch. Of course every now and then I go back and we have some fun together – sue me, I’m not a Saint.
But frankly – my experience last Saturday with the Salami Pizza Hut – was a definite turn off. It smelled and tasted worse than my socks (I assume that, I’ve never actually tasted my socks), if I were to wear them a whole year through without ever taking them off.
People who know me would say – “That’s not too dramatic, your feet smell like lilies and taste like strawberries. And you fart perfume – Lola by Marc Jacobs!”.
Well who am I to deny this everlasting truth. But bottom line: Salami Pizza – it’s over.
Now I want to introduce you to my new crush – it’s this beautiful skin spinach and roasted chickpea salad that is making me feel younger, fresher and smells and tastes like spring.
It’s a tasty, crunchy and light salad and it makes a great light lunch, which will make you feel like you want to make a fiesta and not a siesta. Which means – you will have more energy and won’t need to take a nap after lunch.
I ate this beautiful skin salad last week for a few days and tried out some variations.
Not because I’m a cheater and can’t stick to one salad for the rest of my life week, but because I had some leftover lentil burgers and some roasted peppers and when the opportunity presented itself, I just tossed them into this beautifying queen salad.

Spinach and Roasted Chickpea Salad

This vegan [alkalizing|http://www.beautybites.org/category/recipes/alkaline/] spinach and roasted chickpea salad is great for the skin - it's fresh, healthy, and irresistibly delicious!
Ingredients
For the salad
- handful roasted chickpeas
- 1 cup spinach
- 1/2 cup chopped green cabbage
- handful dill
- handful arugula
- 1 carrot
- 1 green pepper
- 1/2 cucumber or 1 small cucumber
For the dressing:
- 1/2 cup sunflower seeds
- juice of 1/2 lemon
- pinch of salt
- pinch of black pepper
- 1/3 cups water
Instructions
- Chop all the vegetables for the salad and mix in a big bowl.
- In a blender put all the ingredients for the dressing together and blend at high speed until very smooth.
- Add up to 3 tbsp of the dressing to the salad, season with some salt if you need to and you're ready for an alkalizing lunch.
