So originally I didn’t think this was guacamole, but who am I to name recipes? Turns out with these ingredients this easy and delicious recipe is pretty much guacamole with basil and cucumber. So let’s go with it.
Another thing I realized just now: this side dish is low carb and vegan. Can you believe it? The impossible combo. This means it’s great if you want to lose weight, reduce insulin resistance and improve your health.
This avocado recipe is perfect for dipping or as a side, sometimes it can even pretend to be a salad. Honestly, it can be anything it wants to be. Don’t you dare tell it something else!
Super easy, delicious and healthy, it will be good in bowls and wraps, even if they’re lettuce wraps.
I used this guacamole version for my vegan quesadilla recipe and in this avocado bean bowl. Makes everything super satisfying and adds freshness!

Guacamole With Cucumbers & Basil – Low Carb & Vegan

This easy guacamole with basil and cucumber is a satisfying healthy side dish that is low-carb, vegan and paleo! You can use it in wraps, in healthy bowls or enjoy with dinner!
Ingredients
- 1 big avocado
- 1 garlic clove, minced
- 1 tsp lemon juice
- 1 tomato, chopped
- 1/2 cucumber, chopped
- 4 basil leaves
- 1/3 cup arugula, chopped
- salt & pepper to taste
Instructions
- Mash avocado, garlic, lemon and 1/2 of the tomato with a fork until well combined.
- Add cucumber, rest of the tomato, basil and arugula - mix everything well together. Add salt and pepper to taste and enjoy!
