This healthy apple cake is officially my favorite dessert ever.
Like, if I tell you I’ve been looking for this cake all my life would you believe me?

I think so.
I know I said I hate apples. I say a lot of things. And if it wasn’t for the delicious mini apple crumble pies I made last year, I would’ve probably lost all faith in apples. I can’t eat a single one of them without having to scratch my ears from the inside. (I am allergic to raw apples, raw nuts, pretty much all raw tree things).
But this, this apple cake – it is the single most delicious cake or dessert I have ever made, eaten, tasted, touched, smelled, seen or heard. And also whatever you do with the sixth sense.
It smells like cinnamon and apples and tastes healthy but in a homemade way, not in a gross way. Like a homemade heaven.
I used a little more honey than usually, but I just had to. I had to use this much honey, because I was listening to Mariah Carey and she has a song that says honey about a million times. But also because honey is delicious and this recipe needs it.
I made this cake at my mom’s place, where I didn’t have my own equipment and I didn’t have any muffin cups (so feel free to make these into muffins and top with chopped walnuts), but it turned out amazing.
You don’t need a lot of apples – 2 are enough and you can also use pears. I actually used 2 small pears instead of the second apple. Could not taste them in there – apple was definitely more dominant.
And that apple btw was pretty old, because my mom was on vacation for 2 weeks. Meaning the apple was probably 3 weeks old, and it looked like a young Benjamin Button.

I’m not claiming this is the healthiest apple cake you could make. However it is a healthy apple cake that you are actually gonna want to eat.
And I used here ingredients like oats, cinnamon, apples, walnuts, sunflower seeds and honey.
Basically lots of fiber, some antioxidants (let’s be real: we’re baking this cake!) and a lot less refined products than the usual cake recipes. Well it’s no refined products. This has no refined sugar and no flour – just oats and honey.
So when you eat this healthy apple cake, feel good, not guilty like the tagline of my blog tells you.
If you’re worried you’re gonna eat too much of this, because like me you worry about nonsense…I don’t know about you, but whenever I make something healthy and delicious, I can’t help but share it with whoever is around.
This saves me from overeating. If I had just bought this, I would probably eat 3x more.
So if your family or friends are not around – bring some cake to work or give a piece to your neighbors. They’ll love you.

Now this cake looks kinda flat, because I didn’t have the smaller cake form here or muffin cups. Today or tomorrow I will actually be making this again, so I might, just might, update the photos later and double the ingredients. Will write this as an update down below.
Also this recipe is not vegan, as I used one egg. I am not sure if it will work with chia or flax egg, if you do try these options, let me know. I’m pretty sure it should actually work. For a gluten-free version, use gluten-free oats.
Obviously as the name says it – this is a cake, so a dessert recipe. But you can also have this healthy apple cake as a snack at 4pm when you crave something sweet at your desk.
And if you’re like me and like to sometimes start your day with sweet things – have it as breakfast (I would take 2-3 pieces here). This recipe is perfect for a healthy meal prep as it keeps well in the fridge for up to 5 days.

Healthy Apple Cake With Walnuts – Simple, Flourless, With Honey

The best homemade healthy apple cake with walnuts - sweetened with honey and made just with oats, no refined flour. This healthy apple dessert is guilt-free, but very delicious!
Ingredients
- 2 medium apples, peeled
- or: 1 medium apple and 2 pears (small)
- 1 cup oats
- 1/4 cups walnut halves
- 1/4 cups sunflower seeds
- 2 tbsp coconut oil
- 1 tsp vanilla
- 1 tbsp cinnamon
- 1 tsp baking powder
- 1 egg
- 1/2 tsp baking soda
- 1/2 cup honey
Instructions
- Peel and chop apples and pears into small chunks. Using a hand blender or your blender (if you have a good one) blend half of the apples and pears until smooth.
- Grind the oats into flour using a nut grinder or a food processor. Melt the coconut oil, so that it's easier to whisk.
- In a mixing bowl, whisk the egg, blended apples and pears, coconut oil and honey.
- Add baking soda, baking powder, cinnamon, vanilla to the mixture. Then mix in the fruit chunks.
- Add the ground oats into the mixture and mix until well combined.
- Add walnuts (I didn't chop them, but squished them in my hands, but you can just chop them as a civilized person) and sunflower seeds.
- Transfer to a spring form or separate into muffin cups and bake at 350 F/ 180 C until a toothpick comes out clean (took me around 20-30 minutes, might be longer since I used a larger cake form). Optionally you can add chopped walnuts on top, to make it look more appealing.
- Slice and let cool off a bit - the apples inside get too hot, don't burn your tongue like me.
- These keep for sure for 3 days in the fridge, but should be good for at least 5 (did not last that long).
