Tomatoes are slowly, but surely turning red and I’m making more and more tomato-based salads and toppings for my oat-based toasts. Salads like this Mediterranean white bean salad that I just loved, loved, loved the other day.

I don’t know why, but I put capers on everything now. Salad – capers. Fish – capers. Meat – capers. Ice cream – capers. I used to hate those when I first tasted them, but things change.
I could’ve probably had the bean salad on its own, but I served it with some fried seabass and tzatziki and it was SO delicious – the recipe will be here soon. Plus, it’s got a low glycemic index, is full of nutrients, ready in 5-10 minutes and is a super healthy lunch or dinner. I hope you enjoy it!
