This tomato mint salad with garlic is a refreshing side dish that will go well with falafel, lentil and even meat dishes. Use it in wraps and bowls to make them even better.
I made it for my quick falafel wrap recipe and used it as the dipping sauce! Loved this salad without the mint, but the mint makes it extra special, so don’t skip it!

Simple Tomato Mint Salad With Garlic

This tomato mint salad with garlic is a quick healthy side dish that is vegan and paleo! It will make your dinner even more satisfying and bring some freshness to a cooked or grilled main dish.
Ingredients
- 1/2 cup cherry tomatoes, chopped
- 1/2 bunch parsley, chopped
- 4-5 mint leaves, chopped
- 1 garlic clove, minced
- olive oil
- salt & pepper to taste
- optional: lemon juice
Instructions
- Add all ingredients to a small bowl, mix together and add salt and pepper to taste!
