This spicy lentil dip can add more flavor to any dinner and it makes it easy to use up leftover lentils.
Okay, honestly, I made this recipe such a long time ago, it’s a senior recipe. Be nice to it.
It was one of those things that happened very spontaneously when I was dealing with some leftover lentils. Yes, I’ve got 99 problems and lentils are among them, sue me.
I didn’t even intend to take a picture or share this dip. But it was so good that I decided to write down the recipe and ever since, I’ve been making this same dip recipe with
So if you don’t have lentils, make this using canned beans, I like both versions.
What you need to definitely do if you’re using the lentils for this recipe is to add salt (if you haven’t added any while cooking them).
- 1 cup lentils, cooked
- handful parsley
- handful basil
- 1 tsp crushed pepper
- 1 small tomato
- 2 garlic cloves
- 1 Tbsp olive oil
- salt + to taste
Using a hand blender or your food processor, blend all ingredients until smooth and enjoy with dinner or as a healthy snack with vegetables! It will keep in the fridge for 3 days.
