So, after living on the edge and eating raw zucchini in fear for my life for weeks and weeks, I’ve now started to heat them up. Result? Delicious quick, healthy stir-fried zucchini noodles! I thought they would turn into soggy sadness, but they did not. They became a simple light weeknight dinner that is low-carb, vegetarian and gluten-free. My favorite thing about these zoodles is that they’re ready before you blink. That’s if you blink every 10-15 minutes like a cheetah. I’m kidding. I have no idea whether cheetahs blink, I’m not a zoologist.

I don’t know if you can tell, but I’m getting super creative at my side hustle of using up all the zucchini we’re growing in the garden. Can’t believe it, but it’s the end of summer and we still have some. Who would’ve thought to turn them into zoodles? Well, I guess I’m the last desperate one since 2009, because everyone’s been eating zucchini noodles plenty of ways.
To me, zoodles always looked very very sad. Soggy and just way too light. Like one of those meals, where you wonder: am I going to go to bed hungry and hate my life? And more importantly, will I even know that I have eaten something? All very deep, very important questions.
But they got me. Just like that seducer called cauliflower rice. Because, aside from having a super demanding side hustle, I’m also currently on a mission to reduce my intake of foods that turn my blood into high fructose syrup without the corn. I should join the Girl Scouts or X Men, I don’t know – some superhero team.
Well, that mission didn’t end well because I recently re-made my apple crumble pie. But, to my relief, it was healthier, and I’ve convinced myself that if I don’t eat the carbs after 3pm, they don’t count. They turn into dust. Kinda like Cinderella’s carriage. Maybe I’m not very good at science.
But I am very good at making and eating these stir-fried zucchini noodles within 30 minutes. Below, I included some step-by-step photos and here’s the recipe, so you can make it as well.
