Because this is one of the best salads on the face of the entire universe and today I’m sharing the recipe for it.
I don’t even know if the universe has a face, but what I do know is this salad is the best – it’s simple, quick and super fresh.
Tomatoes, cucumbers and feta cheese get together here to give your taste buds the time of their mini life.
This salad is perfect as a side dish or as the main dish, if you’re not that hungry!
HEALTH AND BEAUTY BENEFITS
This tomato cucumber salad is loaded with vitamins, antioxidants, fiber.
Together these nutrients protect us from diseases like cancer, heart disease and help keep the skin healthy. Reason for the last one? Well, apparently the pigments in tomatoes act as sunscreen and protect us from sun damage.
Feta cheese is a little bit like the black sheep in this salad. Except it is white. Listen, maybe it is not be the healthiest thing in the world, but I always try to look on the bright side of life. I believe anything in moderation is good for us. Even though feta cheese is high in sodium and saturated fat, it’s also a perfect source of calcium. And we need Calcium to maintain healthy bones and healthy skin.
If you need to reduce the sodium amount you can keep the cheese in water – it will get less salty, needs a few hours though.
This salad is definitely worth a try and if you’re avoiding dairy – simply leave the cheese out, there’s no harm in that. You can also add some nuts, olives and parsley or basil. And please let me know how it goes!
Tomatoes, Cucumbers and Feta Cheese Summer Salad

Ingredients
- 4 tomatoes, cubed
- 2 cucumbers , cubed
- 4 spring onions, thinly sliced
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 30g/1 oz feta cheese, shredded or crumbled
Instructions
- Toss tomatoes, cucumbers and onions in a bowl.
- Add olive oil, vinegar, pinch of salt. Mix.
- Top with shredded or crumbled feta cheese.
