Life is pretty great when you have a vegan potato-lentil salad like this one. It’s there to comfort you at any time while giving you all the nutrients you need to maintain that beautiful healthy skin glow.
It is one of my very favorite recipes I make at home and I have made it many many times because it’s super delicious. And you’d never guess it’s vegan or gluten-free.
Okay, I actually put it on a pedestal of bread, so it’s not exactly gluten-free, but who cares?
You can also wrap it in lettuce or just eat it like that if you avoid gluten.
You will be happy forever.
It’s creamy, satisfying and very flavorful.
BEAUTY AND HEALTH BENEFITS
So this salad has quite a few health benefits that are quite impressive.
It’s high fiber
This is very important for 2 things – weight loss and healthy skin. Fiber fills you up and reduces your appetite, which means – yeah, you won’t be eating that much, if you’re not super stubborn. It also cleans the colon like no other. That’s pretty good because it gets rid of toxins and bad bacteria which might be sending not only bad

Lots of Vitamin C.

High-protein.
Do I need to say more about lentils, these adorable little health bombs? They’re high-fiber and high-protein.
So they’re pretty much perfect.
Protein is as we all know very important for building muscle mass and for weight loss. But that’s not all.
It’s also essential for the maintenance of the skin & hair – collagen in the skin is a protein, keratin in hair is a protein, keratin from the keratinocytes in the skin is a protein – we’re made out of protein.
That’s why we need it.
It’s full of beta carotene
I love me some beta carotene. Not only is it a powerful antioxidant and a sun protector it can also give me a natural healthy tan.
Benefits of onions
Not only are they garlic’s brothers from another father, but they like garlic have pretty awesome properties – anti-inflammatory, detoxifying and antioxidant thanks to lots and lots of quercetin.
All of these properties make them perfect for clearing the skin.

Turmeric is really having her moment right now.
Quite the success story.
From rags to riches.
From a poor stinker to gold.
And turmeric really deserves it – it’s got some true superpowers – it has antioxidant, anti-inflammatory and anti-cancer properties.
As for skin: it’s been proposed to prevent skin cancer and be helpful with acne, psoriasis, wound healing and skin aging.
Turmeric is not necessarily MY favorite spice, but if it’s that good for my skin and health, then damn it I’ll be using it more often than I’ve used hashtags on Instagram today.
VEGAN POTATO LENTIL SALAD – BEAUTY FOOD RECIPES

Ingredients
For the salad:
- 1 carrot
- 3 potatoes, chopped, cooked and cooled
- 1 cup cooked lentils
- 1 red pepper
- 10 leaves basil
- ½ cup arugula
- 1 onion
Sauce
- 1 tsp mustard
- ½ avocado
- ½ cup lentils
- ½ lemon – squeezed
- 1 tbsp turmeric
- 1 tsp majoram
- 1 tsp balsamic vinegar
Instructions
- Cook potatoes (cubed) and lentils separately. Drain and rinse, let cool off for around an hour.
- Meantime chop all vegetables for the salad into tiny pieces.
- Peel avocado for the sauce
- After potatoes and lentils have cooled off – blend ½ cup of lentils with the other ingredients for the sauce in your food processor.
- Place potatoes, the rest of the lentils, peppers, carrot, basil, arugula and onion in a mixing bowl.
- After you’ve blended the sauce add it to the rest of ingredients in the mixing bowl and mix everything well together.
- Add salt and pepper to taste.
- Most importantly: enjoy!
This sounds wonderfully intriguing! However, I don’t like marjoram or tumeric. Do you have any suggestions? I know its a strange question, so sorry.
