This healthy avocado egg salad is super tasty and easy, great for lunch or dinner. This recipe is low carb, vegetarian, paleo andgluten-free!
You know what I was thinking while putting this healthy avocado salad together?
“OMG, this is a keto recipe. It is. I’m so in ketosis right now!”
Then I put it on a piece bread and forgot everything.
Since I researched and wrote my article on the ketogenic diet I have been thinking about it really often. It was such a fascinating and convincing research it really made me feel like I need to eat less carbs. Well, not that I didn’t know I need to eat less carbs – with my family history and belly fat. I know it.
My dad knows it.
But do we do it?
In fact yesterday I had dinner at his house and he offered me a coconut cookie. Not a healthy alternative, a real cookie. As many as I wanted. And surprise, good thing I’m on that 66 Day Challenge – I said no. And I don’t regret it a bit, I did not miss out. He, on the other hand, did have a cookie.
I’m trying to convince my dad to eat a more plant-based lower-carb diet, because he has diabetes, I talked a little bit about it here. However my strategy seems to not be working. But I’ll keep trying and buying him all the raw vegan books he has to read.
But now I’m thinking, maybe the ketogenic diet will work for him? Again I don’t know how to convince him to do it. I will try to find a good book. They seem to be kinda working.
Maybe this avocado egg salad will also do the magic trick.
It did work for me and my mom who was starving, so no guarantee on her part, but I loved this little salad. It’s satisfying, really healthy with all the vegetables inside and it’s really delicious. I did eat it a big part of it with bread, because if I don’t eat bread – who am I?
But it was really good even without it. So if you’re on the ketogenic or paleo diet, this salad with avocado and eggs will be good for you too. And I’ve seen some paleo and keto recipes for bread on Pinterest, maybe they’ll be a good option here too.
And if you really don’t care about this being paleo, vegetarian or keto – it’s still a really good healthy salad, no need for mayonnaise here.
How To Make This Avocado Egg Salad
The first thing you need to do is boil some eggs, hard boil them. Boil them real good.
Then open an avocado scoop it out and put it in a big bowl.
Next start chopping vegetables. Don’t forget the olives. I repeat: DO NOT FORGET THE OLIVES. So good in there, they make for this contrast between sweet from the red peppers, savory from the eggs and then the olives are salty! Actually, we’ve got all the tastes here – sweet, salty, sour (lemon), bitter (greens), savory and fat. See how satisfying this salad is? It’s got all tastes.
Let’s not get distracted though. Next we take a fork and mash the avocado with some garlic and lemon until it’s unrecognizable. We add the rest of the ingredients, mash some more and then grind some black pepper and add a pinch of salt after having a taste. I needed to add some salt, you might be different – taste before adding salt.

- 4 eggs, hard-boiled and chopped
- 1 avocado
- 1 small red onion, chopped
- 1/2 red bell pepper, chopped
- 3-4 fresh basil leaves, chopped
- handful arugula, chopped
- 6 olives, chopped
- 2 tbsp lemon juice
- 1 garlic clove, minced
- 1 tsp mustard
- Using a fork mash avocado with mustard, garlic and lemon juice.
- Add the chopped vegetables, herbs and eggs. Mix well together, add black pepper and salt to taste.
